When I first knew about it, I never thought to post it because it sounded simple. But Aamras and Puri was a new combo to me and I am sure to many of you in south India also it is the new combination to eat Aamras with Puri.

 

Ingredients: For Aamras Recipe

Ripe mangoes: 4 large size Alphonso mangoes, cut into cube.Choose ripe, sweet juicy mangoes. I recommend Alphonso as the Good variety for this recipe. If you want then you can use Senthooram, Neelam, and Kesari varieties too.

Sugar: You can use 4-5 tablespoons of White sugar or jaggery for this Aamras Recipe. Mango has its sweetness, so adjust accordingly. You can add or less some sugar to balance the taste.

Cardamom powder: 1/2 teaspoon (optional). This helps to enhance a good flavor that goes well with mango’s flavor.

Saffron strands: a few (optional). Saffron gives flavor as well as color.

Milk: 2-3 tablespoons (optional, for good consistency)

Salt: one pinch of salt can enhance the flavor of Aam ras.

How To Make Aamras Recipe

1. Choose ripe and juicy Alphonso mangoes for the best flavor. Wash them and peel the skin.

2. Cut the mango flesh into cubes and discard the seeds. Place the mango cubes in a blender or a food jar.

3. Add sugar or jaggery to the mango chunks.

NOTE: The amount of jaggery and sugar depends on the sweetness of mangoes and your own preference for sweetness. If the mangoes are tangy, you can add some sugar or jaggery. But if the mangoes are sweet or very sweet, you do not need to add sugar or any sweetener.

4. Use a pinch of cardamom powder for an authentic flavor. Saffron strands can also be added at this stage to enhance the flavor of the Aamras.

5. Cut the mangos and Blend them in a grinder then add sugar, ice cubes, and any optional ingredients until it turns into a smooth pulp. first Check the taste aamras and add sugar if required. If the consistency is too thick, you can add a couple of tablespoons of milk or a few ice cubes to thin it out.

6. Once the Aam Ras reaches the perfect consistency, transfer it to a serving bowl. NOTE: if you do not have saffron. Additionally, you can add ¼ teaspoon of dry ginger powder at this step.

7. Chill the Aam Ras in the refrigerator for at least two before serving. This helps to enhance the flavors and provides a refreshing experience.

Storage Instructions Technically You can freeze Aamras for longer storage. but it’s not recommended because freezing can alter the texture and taste of the mango puree. Normally Aam ras stays good for 4-5 days in an airtight container without a freezer. but if you want to store it for a long time then freeze it. It stays good for up to 7 months. Freeze them in individual portions and thaw them in the refrigerator. Stir aam ras well until combined and smooth then enjoy.

NOTE: Take aamras at room temperature for a few hours before eating aamras. Stir well before serving to restore its smooth texture
